The lovo is a traditional Fijian feast where the food is wrapped in banana leaves and cooked slowly in an earth oven over smouldering stones, providing a distinctive faintly smokey flavour. Vegetables, fish and meats are placed in the oven and many dishes are prepared in coconut milk.
